Zucchini pie – Ingredients

Serves 4-5 persons

  • 2 Medium size Zucchini (grated)
  • 2 Cups quinoa (cooked)
  • 2 Sprigs of parsley (chopped)
  • Salt and black pepper to taste
  • 1/3rd cup full cream milk or 2 tablespoons cream
  • 1/2 cup feta cheese (cubed into small pieces) for sprinkling on top of the pie
  • 2 Medium-sized eggs. Tip: Eggs can be replaced with greek yogurt or thick yogurt. Put 3 tablespoons of yogurt to replace 1 egg
  • 1 Tablespoon olive oil or butter to grease the tray
  • Pinch baking soda and baking powder (optional)
  • Seeds or nuts per taste – pine nuts, peanuts, or chia seeds will go well (optional)
  • 1/4th to 1/3rd cup mozzarella cheese (grated) – optional
  • 8-9 cherry tomatoes (cut into small pieces) for sprinkling along with the feta cheese (optional)

Recipe Zucchini pie – Method of preparation

Time of preparation: 15-20 mins

Time of cooking: 30-40 mins

  1. Boil and cook quinoa (pressure cooker with one whistle or on a medium heat for 10 mins till it is soft)
  2. Add and mix the ingredients together with quinoa – zucchini, parsley, salt & pepper, seeds, mozzarella cheese
  3. In a separate bowl mix milk/cream and eggs/yogurt and blend well
  4. Mix all ingredients together along with baking soda and baking powder should you have added it
  5. Keep the mix aside for 10-15 minutes and let it set
  6. Grease the baking tray and add the mix
  7. Sprinkle feta cheese and cherry tomatoes on the top
  8. Preheat the oven at 180 C
  9. Insert the tray in the oven and bake for about 20-30 minutes
  10. Check with fork or toothpick and remove the tray from the oven if it comes out clean.
  11. And you are all set to go! Enjoy!!
