Baked stuffed tomato recipe is one of my few creations that I have been proud to turn around very quickly and yet enjoy thoroughly! Full of healthy ingredients, flavors, and aromas from herbs and spices, baked stuffed tomatoes can be prepared in multiple styles per ingredients available in your region!

Baked Stuffed tomatoes are great as a starter for your parties at home! They look gorgeous and taste amazing, earning you credits of appreciation from your loved ones. And of course health alert!! This is a perfect breakfast or even a snack for calorie conscious people.

I prepared this dish in continental style with cheese and vegetables filling but this can also be prepared in Indian style. I have provided here methods for both the version. Choose one that serves your palette better.

Baked stuffed tomato recipe Ingredients

Serves: 2 persons

  • 4 large-sized tomatoes, not very ripe

For Filling (continental style)

  • 2 tablespoons mashed potato
  • 3-4 florets of cauliflower
  • 2 tablespoons sweet corn
  • 1 small sized carrot, finely chopped
  • 1/2 teaspoon chopped basil leaves
  • 1 teaspoon parmesan cheese
  • 4 small slices of mozzarella cheese
  • 1/4 teaspoon grounded black pepper
  • 1/4 teaspoon lemon juice
  • 1 green chili, finely chopped
  • Salt as per taste

For Filling (Indian Style)

  • 2 tablespoons mashed potato
  • 3-4 florets of cauliflower
  • 2-3 tablespoons  paneer crumbles
  • 2 tablespoons sweet corn
  • 1 small sized carrot, finely chopped
  • 1/2 teaspoon Chaat masala
  • 1/4 teaspoon Tandoori Masala
  • 1 green chili, finely chopped
  • Salt as per taste

Baked stuffed tomato recipe: Method of preparation

Preparation Time: 10 minutes

Baking Time: 20 minutes

  • Slowly remove the tops of the tomatoes and slowly scoop out the seeds. Keep the seeds separate. this can be used later for making other dishes but won’t be used here
  • Mix the rest of the ingredients for either continental or Indian style stuffed tomatoes.
  • Fill the tomatoes with the filling.
  • For Continental style, cover each tomato with the mozzarella slice, just enough to cover the mouth of the tomato.
  • Bake in a pre-heated oven for 15 minutes at 375F/190C/ gas mark 5
  • Remove from the oven when the tomatoes are just baked. Relish them hot for snacks or breakfast
